Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 8 cups chicken broth
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 2 cups egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
In a large pot, combine chicken broth, diced chicken, carrots, celery, onion, garlic, thyme, oregano, and bay leaf
Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes or until chicken is cooked through and vegetables are tender
Add egg noodles to the pot and cook for an additional 8-10 minutes or until noodles are al dente
Season with salt and pepper to taste, and discard the bay leaf
