Ingredients:
- 1 cup raw cashews, soaked overnight
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup unsweetened almond milk
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 10 ounces frozen spinach, thawed and squeezed dry
Instructions:
In a blender, combine soaked cashews and almond milk until smooth
Heat olive oil in a skillet over medium heat
Add chopped onion and minced garlic, saut until translucent
Add the cashew mixture to the skillet, stirring constantly until thickened
Stir in nutritional yeast, lemon juice, onion powder, garlic powder, smoked paprika, salt, and black pepper
