These Coconut Butter Buttons are a delicious and healthy snack for kids, packed with healthy fats and low in carbs. They have a delightful coconut flavor with a touch of sweetness.
Ingredients:
- 1 cup coconut butter
- 1/4 cup unsweetened shredded coconut
- 2 tablespoons powdered erythritol or your preferred keto-friendly sweetener
- 1 teaspoon vanilla extract
Instructions:
Melt the coconut butter in a bowl that can go in the microwave until it's smooth
Add the vanilla extract, powdered erythritol, and shredded coconut and mix them in well
Put small amounts of the mixture into silicone molds or onto a baking sheet lined with parchment paper
Use your hands to shape the mixture into buttons
Freeze the buttons for about 15 to 20 minutes, or until they become firm
Take them out of the molds or baking sheet when they're firm and enjoy!
