Ingredients:
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup whole milk
- 1/4 cup brewed coffee, cooled
- 1/4 cup chopped pecans
- 1/4 cup mini chocolate chips
- 1/4 cup caramel sauce
- 1/4 cup whipped cream
- 2 tablespoons chocolate syrup
- 1 tablespoon unsalted butter, for cooking
Instructions:
In a mixing bowl, whisk together flour, cocoa powder, granulated sugar, baking powder, and salt
In another bowl, whisk the eggs, then add the milk and cooled coffee
Mix well
Combine the wet ingredients with the dry ingredients and stir until smooth
Fold in chopped pecans and mini chocolate chips
Heat a non-stick skillet over medium heat and add 1 tablespoon of butter to melt
Pour 1/4 cup of the crepe batter into the skillet and swirl it to create a thin, even layer
Cook for about 2 minutes until the edges start to lift, then flip and cook for an additional 1-2 minutes
Repeat with the remaining batter to make additional crepes
To assemble, spread caramel sauce over each crepe, then fold it into quarters
Top with whipped cream and drizzle with chocolate syrup
