Ingredients:

- 5 lbs pork loin, cut into 1-inch cubes
- 1 pineapple, peeled, cored, and cut into chunks
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 3 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions:
Mix olive oil, soy sauce, honey, ground cumin, smoked paprika, dried thyme, salt, and black pepper in a bowl until well mixed
Put the pork cubes in a shallow dish or a plastic bag that can be closed again
Don't use the other half of the marinade right away; save it for later
For more flavor, put the pork in a marinade in the fridge for at least 30 minutes or overnight
Set the grill or grill pan over medium-high heat to get it hot
On the soaked skewers, alternately thread pineapple chunks, red bell pepper, yellow bell pepper, red onion, and pork that has been marinated
Use the marinade that you saved to brush the kabobs
Turn the kabobs over every so often for 10 to 12 minutes, or until the pork is cooked all the way through and has a nice char
You can put the Caribbean Pork Kabobs on top of rice or your favorite side dish
