A hearty and nutritious meal cooked slowly in a savory broth, resulting in tender chicken and flavorful vegetables.
Ingredients:
- 4 chicken breasts, boneless and skinless
- 2 cups baby potatoes, halved
- 2 cups carrots, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
Add salt, pepper, dried thyme, and dried rosemary to chicken breasts
Put olive oil in a pan and heat it over medium-high heat
For about three minutes on each side, sear the chicken breasts until they are browned
In the slow cooker, put baby potatoes, carrots, onion, and garlic in layers
On top of the vegetables, put chicken breasts that have been seared
Add chicken broth to the vegetables and chicken
Set the cooker to low for 6 to 8 hours or high for 3 to 4 hours
Remove the lid and cook until the chicken is done and the vegetables are soft
Serve hot, with fresh herbs on top if you want
